  • - 1 green chili, chopped (optional)
  • - 1 teaspoon of cumin seeds
  • - 1 teaspoon of coriander seeds
  • - 1/4 teaspoon of fenugreek seeds
  • - 1/4 teaspoon of fennel seeds
  • - 2 bay leaves

  • - 1 red bell pepper, chopped
  • - 1 green bell pepper, chopped
  • - 2 tablespoons of chopped cilantro

Directions:

  • 1. In a large bowl, toss the chicken pieces with the yogurt, 1 teaspoon of salt, turmeric, paprika, and garam masala. Cover and refrigerate for at least 30 minutes or up to overnight.

After roasting the cumin seeds, coriander seeds, and dried red chilies in a skillet, transfer to a spice grinder or mortar and pestle and grind to a fine powder to make your own homemade garam masala. Set aside.

  • 4. Add the tomato paste and water and bring to a boil. Reduce the heat and simmer for about 10 minutes or until slightly thickened.
  • 5. Add the tomatoes and the remaining salt and cook for another 10 minutes or until soft.
  • 6. Add the bell peppers and cook for another 10 minutes or until crisp-tender.
  • 7. Add the chicken along with any marinade and bring to a boil. Lower the heat and simmer for about 15 minutes or until the chicken is cooked through and the sauce is thickened.
